I'm in full bread making mode these days.  It all started with deciding to finally produce an excellent whole wheat sourdough.  It's escalated into a full blown whole grain obsession.  

A couple of weeks ago I ordered two books (Flour Power and one I can't remember the exact title of off the top of my head) justifying my purchase as "it will be my birthday present".  Wouldn't you know they showed up on my birthday (yesterday)!  Weird huh?

I'm going to buy a grain mill (pretty sure it will be the Grainmaker Grinder).  it's going to cost about $300 with shipping for the one I want, so I'll need to set aside money until I can get it.  With this grinder I can grind everything including soybeans and corn.

I made a Sourdough Rye with one of the starters I'm working on.  Bread rise and texture good - tastes good too, but not "sour" enough yet.  Maybe another week and I will try using the starter again.

I started baking while still in high school, but never had the discipline to make and keep a starter going. Now my Midwestern/Central European heritage has a simple equation expressed this way. (Rye bread = Corned Beef {or Ham}). what are you [livejournal.com profile] eats_veggies going to put on your rye?

You should join [livejournal.com profile] breadmaking. A few of the people are a little pretentious, but it's a great community.

Wild Yeast Starter is easy. Glass jar or crock / 1 cup water / 1 cup flour - stir. Set with cloth covering. Once a day stir - then add about 1/3 cup flour - stir again. Do that each day until it starts to foam nice and look like actual starter. Then you can refrigerate it and just feed it once or twice a week.

People say to feed you first remove 1 cup and add 1 cup flour / water, but I don't do that and my starter still forms. I only add water if it starts getting thicker than thick pancake batter.

I like to make my rye bread toasted with margarine, but it also makes a good veggieburger sandwich!

Oh yum!! I love fresh baked bread- actually I love any bread. I've always said if I lived in Italy, I'd be tewn feet wide from eatiing all the bread and rolls. That looks so yummy in the picture.
