I don't use an actual recipe - but my filling includes Spices, Beans, Potato, Onion, Garlic, Bulgar, and roasted chiles. 


Ortega Chiles are the best if you can't get fresh and roast them yourself.


Finished cooking everything - ready to combine it and start making Tamales!



The filling tastes MUCH MUCH better than it looks here..... :-)




When I make Tamales they are the meal sized ones (they weigh about 4 or 5 ounces.  This is because I'm lazy and don't want to fill/wrap hundreds of tamales.  Someday I will get a bottom steaming riser so I can steam them standing up - my Dim Sum top steamer works for now.

I wish I could cook as well as you. I did about half the cooking for my family and they had to put up with my concoctions (made in a witch's lab) :) It was held at my eldest daughter's, and they are vegan. She cooked some yummy things. One thing I made was labeled 'green brains', but they liked the taste of it! (Rice noodles in home-made pesto - organic basil, organic garlic, nice tasty olive oil, pecan nuts, lemon juice and sea salt).
