Xmas Eve Tamale Making
Dec. 25th, 2008 10:33 amI don't use an actual recipe - but my filling includes Spices, Beans, Potato, Onion, Garlic, Bulgar, and roasted chiles.

Ortega Chiles are the best if you can't get fresh and roast them yourself.

Finished cooking everything - ready to combine it and start making Tamales!

The filling tastes MUCH MUCH better than it looks here..... :-)

When I make Tamales they are the meal sized ones (they weigh about 4 or 5 ounces. This is because I'm lazy and don't want to fill/wrap hundreds of tamales. Someday I will get a bottom steaming riser so I can steam them standing up - my Dim Sum top steamer works for now.
