Now it's looking more like a beet.  Either way - the roots appear to be edible - so I'm eating them! :-)

Oh, I forgot to say - they grow all winter here in Texas. They turn brown if you forget to cover them if we get a light frost, but otherwise they rock. One of my favorites because they really produce big time and they will continue until it gets really hot out whereas my lettuce and spinach have already gone to seed.

Yep, they withstand all kinds of extremes and keep on keeping on! Definitely a favorite of mine. I found a perennial variety last year and it's a pretty little rosette ready to eat already here... and I think it's supposed to come back every year. Very cool!
